Cinnamon Sticks are crumbly, mild, yet slightly sweeter with a hint of spiciness (clove and Citrus) and NOT hard like the Cassia Cinnamon. Also Cassia Cinnamon has high levels of Coumarin. If however you prefer the sweeter, smoother and easy to grind (won't break the mixer or mortar) Cinnamon for fine desserts and curry pastes, then choose premium quality Cinnamon.
